In north India, there is another version of Dahi vada which is called Dahi Bhalla. Dahi Bhalla dish is a popular north Indian snack or dish as well as street food. They can also be served as a starter. We can also make them during the festive time.

How to make Dahi Bhalla dish :
First of all, we need to soak the Urad dal / Black Gram in water for at least 6 hours. Drain the water completely and in a mixer grinder, add dal with little water, ginger and green chili pepper. Keep adding little water at regular intervals to help the grinding process.
The batter is done when the batter is super light, airy/fluffy. To test whether the batter is perfect or not, drop some batter in water if the batter floats on the water, then add salt to this and it’s ready to be fried. Here you can deep fry the Bhalla.
Do not add too much water and make the batter watery. The batter should be light, airy and should hold together when frying.
Adding more water to fry these will make the batter watery and will not be able to fry them.
Always fry the Bhalla on medium to low flame till crisp.
